As you may know, I am partnering with GrillBlazer, the trailblazing portable propane torch maker. They have created what I call a flamethrower (they call it a torch – Watch the video and you be the judge!) to throw an over 3,000° Fahrenheit flame onto the surface of your meat. This brings out a perfect Maillard reaction (a perfect crust) with ease and style. This testosterone-inducing tool puts out 400,000 BTUs of heat, which leaves all other torches in the dust. How Does the Su-VGun Work?

This fun and powerful torch makes me even more excited to make steaks, chops, roasts, etc. Really anything I can reverse sear. The Su-VGun body looks very much like a pistol, hence the name. The tool differs from its big brother the GrillGun (My Review / Buy Here) in two ways. The barrel is shorter than the GrillGun’s barrel, and there is a plate at the end of the “muzzle” that concentrates the flame. This makes the Su-VGun very well suited for searing food, whereas the GrillGun is more suited for lighting grills and smokers.

On the bottom of the handle there is a place to hook up your 1-pound propane tank. You can also get an 8-foot hose that attaches to a 20-pound propane tank.

Once all of your parts are in place, you can start the Su-VGun. To light, turn on the gas (just a tad!) and pull the trigger. A small flame will emit from the flamethrower. With your pinky on the safety, squeeze the grip on the handle to light at full flame and you’re ready to sear! Slowly lower the flame onto the surface of the meat that you’re searing.

How to Sear Meat with the Su-VGun

The flame is, as I mentioned above, over 3,000°F – much hotter than a typical 500°-600° cast iron pan or grill grate on a BBQ set up for searing. This means you need less time to sear using the Su-VGun. I typically divide the time in half. If I would normally sear for 60 seconds per side, that turns into 30 seconds per side. Your eyes will tell you when you have a good sear though. Remember you’re looking for dark brown, not a black char.

When you stop squeezing the grip, the intense flame shuts off, and you can shut the pilot off with the valve you used to turn it on..

What Safety Precautions Should I Take When Using?

Of course, when working with flamethrowers, there is an obvious potential danger. It is super fun and manly to use, but also possible mess up. Be fully aware of your surroundings because the flame travels long and will incinerate anything in its path. There are also quite a few safety features built into the GrillBlazer products.

One of my favorite safety features on the Su-VGun (and its big brother the GrillGun) is the gas flow safety valve. Without this (i.e. with knock-offs from the competitors out there), when working with liquid propane when you turn the torch at too much of an angle liquid propane can leak up and into the mechanism. This can be very dangerous, and GrillBlazer took note. If liquid propane starts leaking into the chamber, the gas flow safety valve on the torch will automatically shut off the flow of propane. If this happens to you, shut off the gun, unscrew the propane tank, and release any gas still in the tool. Put the tank back on and it will reset so you can continue using the flamethrower.
